Protein Pancakes

 

This delicious plate of food reminds me why I’ve found long lasting success with food tracking. Believe me, in my 41 years on the planet I’ve tried A LOT of things (Whole 30, Atkins, South Beach, Intermittent Fasting, etc). let’s just say they all left me confused and frustrated with little to show for my efforts.

Food tracking allows me to be more mindful of what I’m putting into my body and helps me to meet nutritional goals to assure I’m getting a good balance of carbs, fats and protein. Tracking also helps me stay within a certain calorie range that meet my current fitness goals. It’s taught me about appropriate portion sizes so that when I’m not actively tracking, I’m more easily able to maintain my weight.

 
 

These Protein Pancakes are an example of a post workout meal that I love. I found the original recipe at @bodybybreefitness a couple of years ago, and it’s been a regular staple for me. It’s packed full of carbs and protein, both of which are essential for recovery. Protein also helps to aide in muscle building and repair and feelings of satiety. I love to top my pancakes with PB fit peanut butter, raspberries and bananas and sugar free syrup. (Maple syrup would be a delicious and natural option too, I just like to save my calories for other things I like more!) Not to mention the portion is huge. It makes three large pancakes that filled a dinner-sized plate. Yum!

Protein Pancake

  • 297 calories 30P/35C/3F

  • 1/2 cup Oatmeal

  • 1/2 cup Egg Whites

  • 1/2 cup Fat Free Cottage Cheese

  • Dash of cinnamon

  • Dash of Vanilla

Directions:

Blend until smooth. Cook as you would a normal pancake. Should make 3 large pancakes.

*You can easily adjust the ratio on this recipe as it is equal parts. This will allow you to make a larger or smaller portions to fit your needs.

Optional Toppings (calories and macros not included):

  • PB Fit (Add a little water and blend until desired consistency)

  • Berries

  • Bananas

  • Syrup
